Genoa Cake

Time: 2 hrs (1.5hr cooking time)

Method

1. Pre-heat oven to 160 C (140 C for Fan), grease and line a loaf tin and place the fruit mix and mixed peel in a bowl with the orange juice to soak

2. Cream butter and sugar then gradually add eggs while beating well

3. Fold in flour, almond extract and fruit and place the mixture into the prepared loaf tin

4. Bake for 15min and then remove and sprinkle with sliced almonds. Put back in oven for 35min and then check if is cooked. If requires more cooking time cover with foil to stop the outside drying out and continue to bake until a skewer comes out clean

Recipe Tester Notes: a handy tip to keep your cherries spread evenly though the cake (and not sink to the bottom) is to toss them in 1tbsp of the flour before adding the flour and cherries to the mix
