Split Pea Salad

Serves: 4-6

Method

1. Let peas soak overnight in room-temperature water, then drain and rinse.

2. Bring a large pot of water to the boil and add peas. Once the water boils again, reduce heat to simmer, cover and cook until peas are just tender, 10-15 minutes. Drain and rinse with cold water. Set aside

3. In a small bowl, whisk together the dressing ingredients, season and add extra to suit your taste and set aside

4. In a medium bowl, combine the peas, onion, tomatoes, parsley and season. Add dressing and toss gently. Allow to sit for 10 minutes for flavors to meld, then stir gently

Not suitable for freezing.

Recipe Tester Notes: Overall a great salad and goes well with grilled chicken.  If you prefer the honey can be swapped for sweetener.
