Spiced Black Turtle Beans

Method
1. Re-hydrate the black turtle beans by soaking them for 12 hours in a ratio of 1 cup of beans to 4 cups of water. This can be done overnight.
2. Chop the onion and capsicum
3. Drain and rince the beans and transfer into a large stockpot. Add in all ingredients except the vinegar and garlic and cover with water. Bring to the boil, stir, cover, reduce heat and simmer for 1 1/2 hours (or until soft) stiring occasionally.
4. Once the beans are tender add the garlic and vinegar and season to taste.
Served hot either on its own or with rice, garnish with sour cream, flat leaf pastley or spring onion.
