Thai Red Lentil Chili (hot)

Method

1. Preheat a 4-quart pot over medium heat. Saute onions and pepper in oil with a pinch of salt, for 5 to 7 minutes.

2. Add garlic and saute a minute more.

3. Add chili powder, sweet potatoes, lentils, red kidney beans, salt and vegetable broth. Cover and bring to a boil. Let it boil for 15 to 20 minutes, stirring occasionally to prevent burning.

4. When lentils are cooked and sweet potatoes are tender, add the remaining ingredients and heat through.

5. Taste for salt and seasoning, top with cilantro and lime and serve

Recipe Tester Notes: This can be pretty hot. To reduce heat you can put in: less chili powder, less curry paste, more coconut cream or serve with yoghurt if you are serving for a group. This recipe Freezes well.
