Oatbran Muffins

1. Preheat oven to 400°F (205°C). Line or grease 12 muffin cups.

2. Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended (the mixture is very thick so you may need to hand beat). Spoon batter into muffin cups. Let stand 10 minutes.

3. Bake at 400 248°F (205°C) for 12-15 minutes or until golden brown.

Recipe Tester Notes: As with most oatbran muffins these tend to be on the dry side. We suggest adding some dried fruit to add moisture to each mouthful. Our favouristes were Raisins and diced apricots.
